Chocolate Blooming:
Chocolate bloom is either of two types of whitish coating that can appear on the surface of chocolate: fat bloom, caused by changes in the fat crystals in the chocolate; and sugar bloom, due to crystals formed by the action of moisture on the sugar. Fat and sugar bloom damage the appearance of chocolate but do not limit its shelf life and is still very much edible and flavor will not be compromised. Chocolate is best stored in cool ambient temperatures between 15-21°C (58-70°F) to keep it from developing fat bloom or melting, and in dry locations with humidity levels of 60% and below to keep it from interacting with water and developing sugar bloom.
Do not store chocolate in the refrigerator. The refrigerator will cause humidity and temperature swings keeping it out of the ideal conditions.
